Juneteenth and Columbus Day
Honestly I don't understand most of the random holidays that government entities give their employees the day off for. Just give your employees some extra days off with the freedom to take them when they choose. Juneteenth and Columbus Day from my research originated as regional celebrations based on the history of the region. For example, Juneteenth is the day that Texas found out the Civil War was over.
